Yai's Thai Red Thai Coconut Curry is so creamy with a slight kick and it brings so much depth to this recipe. You get that authentic Thai flavor, just like how a Yai (Thai grandma) makes, right in your own kitchen!

INGREDIENTS✔️ 1 x pita bread
✔️ 3 tbsp + 2 tsp Yai’s Thai Red Thai Coconut Curry Sauce
✔️ 1 cup shredded mozzarella cheese
✔️ 1⁄4 cup cooked shrimp (~6-7 pieces)
✔️ 1⁄4 cup small broccoli florets
✔️ 2 x shiitake mushrooms, sliced
✔️ 1⁄4 orange bell pepper, sliced
✔️ 1⁄2 small shallot, sliced
✔️ 1 tsp fresh Thai basil leaves
✔️ 1 tsp black pepper
✔️ Garnish: black pepper, green onion, red chili flakes
INSTRUCTIONS:✅ Place the pita bread onto a plate and evenly spread 3 tbsp Yai’s Thai Red Thai Coconut Curry Sauce as the base
✅ Top the pita with mozzarella cheese, shrimp, broccoli florets, shiitake mushrooms, orange bell pepper and shallots
✅ Garnish the pita with Thai basil leaves, black pepper and 2 tsp Yai’s Thai Red Thai Coconut Curry Sauce
✅ Air Fry at 375F for 8-10 minutes
✅ Out of the Air Fryer, garnish the pita with black pepper, green onion and red chili flakes
✅ Slice and enjoy!
