One of our favorite go-to recipes for our Yellow Curry is fried rice. It’s a great way to salvage leftover rice, any vegetables going bad in the fridge – peppers, onions or spinach, it doesn’t really matter! Add an egg or two, as well as our Yellow Curry, and you’re good-to-go in about 10 minutes.
Cook Time: 10-15 minutes
Servings: 2-4
INGREDIENTS:
- ½ jar Yai’s Yellow Thai Coconut Curry
- 2 cups rice (leftovers work great!)
- 1 bell pepper, diced (any color)
- ½ onion, chopped
- 1 carrot, sliced
- ½ cup snow peas (sub any green veggie)
- 2 eggs
- 1 tbsp vegetable oil
- Cilantro (optional)
INSTRUCTIONS:
✅ Heat vegetable oil in a large skillet over medium heat
✅ Add carrots and onions, stir and cook for 1-2 minutes
✅ Add bell pepper and peas, stir
✅ Add rice, stir
*Note: if rice is really dried out (ie 3-days old) add a small amount of water
✅ Crack 2 eggs directly into pan, stir to scramble
✅ Pour in Yai’s Yellow Thai Coconut Curry, stir and cook until heated through
