Zesty Thai “Zoodles”
A light medley of zucchini and summer squash "noodles" topped with Spicy Thai Relish.
Cook Time: 10 minutes
- 1 zucchini, spiralized
- 1 summer squash, spiralized
- 1 medium carrot, shredded
- 1/8 cup red onions, chopped
- 1-2 tbsp Yai's Spicy Thai Relish
- 1 tbsp lemon juice
- Black pepper (to taste)
- Salt (to taste)
- Mix zucchini, summer squash, carrot, and onions in a bowl.
- Add lemon juice, salt, and pepper and gently combine.
- Top with a heaping spoonful of Spicy Thai Relish and serve cold.
