Yai's Thai Green Coconut Curry Shrimp Soup

Time: 30 minutes

Serves: 3-4

Ingredients:

  • 1 jar Yai's Thai Green Coconut Curry
  • 32 oz Bone Broth
  • 1 lb Shrimp, peeled
  • 1 large Zucchini, spiralized
  • 2 Shallots, diced
  • 3 cloves Garlic, minced
  • 2-3 Jalapenos, sliced
  • 1 Red Bell Pepper, sliced
  • 1/2 cup Basil, chopped
  • 1 cup Bean Sprouts
  • 1 tbsp Olive Oil
  • Juice of 1 lime

Yai's Thai Green Coconut Curry Soup Prep

Make It:

  1. Heat oil in large pot over medium-high heat
  2. Add garlic and shallots, cook one minute until fragrant
  3. Add 1 cup broth and lime juice, reduce heat to medium and simmer 5 minutes
  4. Add zoodles, jalapenos, Green Curry, and remaining broth
  5. Add shrimp and cook until pink
  6. Stir in basil and red bell peppers, setting some aside for fresh toppings. Cook another minute
  7. Top with fresh jalapenos, red bell peppers, basil, and bean sprouts

*Tip: if you want to add more liquid, rinse the jar of green curry and add that water to the pot!
