Thai Coconut Green Bean Casserole

No need to weigh this dish down with heavy cream - saute your mushrooms in coconut milk instead and add some Yai's Thai Chili Garlic Hot Sauce for a flavor boost!

Yai's Thai Coconut Green Bean Casserole
Serves: 4
Cook Time: 1 hour
Ingredients:
  • 8oz mushrooms, sliced
  • 1 yellow onion, sliced
  • 1 can coconut milk
  • 1/4 cup coconut flour
  • 2 Tbsp Yai's Thai Chili Garlic Hot Sauce
  • 1 Tbsp olive oil
Make It:
  1. Preheat the oven to 375 degrees F.
  2. Steam the green beans for 10 minutes to soften.
  3. Meanwhile, add the mushrooms and coconut milk to a pot. Simmer for 15 minutes. Add most of coconut flour and stir to thicken - reserve the rest. Stir in Chili Garlic Hot Sauce.
  4. Slice the onions in rounds and then cut in half. Sauté in oil for 10 minutes.
  5. Mix the green beans with mushroom sauce. Add to casserole dish.
  6. Top with cooked onions and sprinkle with remaining coconut flour.
  7. Bake for 25-30 minutes until flour on top is golden brown.
