Thai Almond Chicken Salad

 Thanks to Jean Choi of What Great Grandma Ate for this clean and satisfying (with ZERO added sugar) Whole30-Approved featuring our Thai Almond (No-Peanut) Sauce!

Serves 4 I Prep Time 15 minutes

Ingredients:

✅  3 cups cooked and shredded chicken
✅  1 head cabbage, shredded (about 4 cups)
✅  1 large carrot, grated
✅  1 red bell pepper, finely sliced
✅  3 green onions, chopped
✅  1/2 cup cilantro, chopped
✅  1/2 cup cashews, roughly chopped
✅  1/2 tsp crushed red pepper flakes (optional)
✅  1/2 cup Yai’s Thai Almond (No-Peanut) Sauce
✅  Sea salt, to taste
✅  Lime juice, to taste

Instructions:

✔️ In a large bowl, combine chicken, cabbage, carrot, red bell pepper, green onions, cilantro, cashews, and red pepper flakes.
✔️ Pour Yai’s Thai Almond (No-Peanut) Sauce over the salad and toss to coat.
✔️ Taste and add salt or lime juice, if needed. Enjoy!
