 Yai's Thai Portabello Mushroom stacked with Guac, Egg and Thai Salsa


Serves: 2
Time: 15-20 minutes

Ingredients:

Make It: 

  1. Preheat oven to 450 degrees F.
  2. On baking sheet, lightly brush mushrooms with olive oil. Season with salt and pepper.
  3. Roast for 10-15 minutes.
  4. Mash avocado with Ginger Lime Hot Sauce.
  5. Fry or poach eggs.
  6. Remove mushrooms from oven. Fill with guacamole, and place egg on top.
  7. Add a couple spoonfuls of Thai Salsa and enjoy!
