Laap Gai

This is one of our absolute favorite classic Thai dishes. Easy to toss together, good hot or cold, with lettuce or rice - you can't go wrong!


Serves: 4
Cook Time: 15 minutes

Ingredients:
✅  2 lbs ground chicken
✅  1 medium red onion, or 3-4 shallots, sliced
✅  1 cup cilantro, chopped
✅  2 tbsp Yai's Thai Chili Garlic Hot Sauce
✅  4 tbsp fish sauce
✅  Juice of 1-1.5 limes (2-3 tbsp)
✅  Optional: 1 tbsp coconut aminos or soy sauce
✅  Optional: lettuce cups or jasmine rice

Instructions:
☑️  In a skillet, cook the chicken over medium heat.
☑️  Stir in the fish sauce and Chili Garlic Hot Sauce. (Note that with both of these ingredients a little goes a long way, and you can always add more!)
☑️  In a separate bowl, combine the cilantro, red onions and lime juice.
☑️  Once chicken has cooked, add it to the bowl on top of the cilantro and onion mixture. Let sit for a minute or two and then thoroughly mix together (the heat from the chicken "cooks" the shallot just enough to remove the bite).
☑️  Serve in lettuce cups, over jasmine rice, or eat plain!

    Note on spelling & pronunciation: you'll often see this dish spelled "larb gai" or "laab gai." We think the "laap gai" spelling gives you the best sense of how it is pronounced - "laap" is pronounced similarly to a quickly spoken "yup," NOT rhyming with "garb!" The word "gai" means chicken, and rhymes with Yai's Thai!
